Ladies Favorite

An earlier post stated that men (and usually women) love sausage balls.  A female favorite, probably a classic female luncheon dish, would be chicken salad.  Like roast chicken, everyone has their own recipe that tastes best to them.  My personal favorite will be featured here.  However, several combinations I have tried is: sun-dried tomatoes, garlic, and Italian seasonings; grapes, herbs de Provence, and small amount of yogurt; and caramelized onions, wine, and tomatoes.  All these are good with crackers, crossants, cream cheese tart shells, etc.  The possiblities are endless.  So for my person favorite:

chicken salad

Cranberry Chicken Salad

1 can of rinsed chicken (or 2 cups of shredded chicken)
1/3 cup driedcranberries, roughly chopped
2 tablespoon chopped celery
2 tablespoons toasted pecans
Salt and pepper to taste
1/4 cup mayo (maybe more, but always start with less than you think.  You can always add mayo but never take it out.)

Mix the chicken, cranberries, celery, pecans, and salt and pepper together.  Add the mayo a little at a time.  Chill and serve with desired food vehicle.

  1. Finally made this version today. I baked my chicken first with herbs de Provence (you know how I love that stuff). Tasted delicious! Looking forward to having it in my lunch tomorrow at work!
